My old boss at the shop in Tulsa swore by a $9 fish scaler for silver skin, I called it junk for 3 years
Finally tried it after ripping a tenderloin on a $60 order and it cleaned up cleaner than my $40 knife in half the time. Anyone else got a cheap tool that embarrassed the expensive one, or am I the only one who waited this long to eat crow?
Bought a $7 paint scraper from Harbor Freight for breaking down primals and it outworks the fancy de-boning knife I paid way too much for. Sharpened it once in two years and it still glides under silverskin without tearing anything up. Cheap stuff wins way more often than people want to admit.
