Wait, how did the blade break take the whole loin? Once that blade snaps you should be able to pull the meat right off the table, the blade is the only thing moving. Unless the loin got wedged against the guide or you pushed it through the gap when it let go, the meat should still be sitting there in one piece. Worst case you trim off the part the blade was stuck in and sell the rest, a broken blade doesn't ruin the meat by itself. Sounds more like the loin got mangled when the blade jammed than actually lost, so what really happened to it?
