Caught a guy at the shop trimming the fat cap off a ribeye like it was bacon.

I swear he shaved it down to under a quarter inch, which means that steak is gonna dry out on the grill before it even gets a sear, so have you guys ever had to gently tell a new hire they're ruining the marbling?
