Spent $12 on a big bag of dried chickpeas and it's been a game changer

I got a 4-pound bag of dried chickpeas for about twelve bucks at a local market a couple months back. I was a bit worried about the extra step of soaking them overnight, but it's really simple. Once cooked, they cost way less than canned, and you get a ton more. I've made hummus, tossed them in salads, and even roasted them for a crunchy snack. The texture is better too, not as mushy. It feels good to have a cheap, healthy protein ready to go in the fridge. Has anyone else found a good use for the leftover chickpea water? I've heard you can whip it up like egg whites.

I always thought canned were the only way to go for convenience. But my local co-op had a 5-pound bag for ten bucks and I figured why not. The texture is a total difference maker, especially in a curry where they hold their shape. I was wasting so much money on those little cans.

My buddy tried dried beans once and his whole kitchen smelled like a fart factory for two days lol.
