Rant: people keep draining their pasta in a colander and losing half the flavor
I learned this from my grandmother in Erie, PA about 15 years ago and it still bugs me when I see it. She never dumped the pasta water, she just scooped the pasta out with a slotted spoon straight into the sauce and added a splash of the starchy water back in. That starchy water is basically free sauce thickener and it makes a $2 box of spaghetti taste like something from a restaurant. Last night I made a pot of rigatoni this way and my roommate asked what I did different. Does anyone else keep their pasta water or am I the only one still doing it the old way?
