Finally found a chili recipe that uses canned beans and frozen veggies
Made a big pot last Sunday for about $8 and it fed me for four dinners plus two lunches. Anyone else have go-to meals that stretch across the week?

yo @dakota_fox isn't it wild how frozen veggies get a bad rap? i used to be the same way, i thought they'd turn to mush or water down everything. but honestly this chili changed my mind too, they soak up the seasonings and keep their texture way better than i expected. my go-to stretch meal is actually a big pot of lentil soup with whatever canned veggies i have, always makes at least 5 servings for under $10.

I do the same thing with a big batch of pasta sauce and just switch up the pasta shape each day to keep it feeling different. That chili trick with frozen veggies is a solid move, I used to think they tasted watery but they actually hold up fine in soups.
