Old guy at the park taught me the one-move rub trick
I was sweating over a brisket at the local comp in Nashville last fall and this retired pitmaster just walked up and showed me how to season with one hand behind my back. He said 'stop overthinking the sprinkle, just let the meat tell you when it's done.' Has anyone else had a random stranger change your whole cook mid-way?

And here I am trying to do some fancy two-hand sprinkle like I'm seasoning a five star dish, when the whole time I could've just told my left hand to take a coffee break. I tried the one-hand thing on my last pork shoulder and it actually felt more natural, like I wasn't fighting with the shaker anymore. That old timer was probably laughing at us amateurs doing all that extra work for nothing. I swear I've got three different videos saved on my phone about proper rub application and this guy just shows up and solves it in ten seconds. Maybe the secret is to always listen to the guy who's been doing it since before we were born.
