Can we talk about the fact that the brisket stall can last 6 hours and nobody warns you
I was reading through the Franklin BBQ cookbook again last night and he mentions the stall can run anywhere from 2 to 6 hours depending on the cut. Six hours. I sat there staring at that page thinking about my last packer that sat at 165 for what felt like forever and I kept opening the lid to check on it, ruining my temp. Found this out after 3 years of cooking brisket and I always thought I was doing something wrong when it stalled that long. Guess I was just being impatient. Anyone else here fight the urge to wrap early just to get past it?
