Pro tip: my cookies were always flat until I checked my baking powder
I was making chocolate chip for a friend's party and realized the can had been open for over a year. Bought a new one and the next batch came out perfect and fluffy. Anyone else have a simple ingredient check that fixed a long-running fail?

Yeah that "checked my baking powder" thing is a total game changer. I read somewhere that stuff loses its power after like six months, even if it smells fine. @fiona_webb it's probably the culprit behind more than just flat cookies, like dense muffins too. I started writing the date I open any leavener right on the can with a sharpie. It sounds dumb but it works, you never have to guess. My cinnamon was also super weak once and made a whole batch of snickerdoodles taste like nothing.
