Update: My grandpa's slow rise bread trick finally clicked for me
Tbh, waiting it out makes the loaf way better than my rushed bakes ever did.

Ngl, I've had the opposite happen. My quick beer bread or soda bread comes out perfect every time, but when I try those long rise recipes, it just gets dense and sad. Maybe my kitchen's too cold for the slow method to work right.

Feel the same way about my kitchen. Tried a fancy overnight loaf last winter and it barely rose at all. Woke up to a sad, cold lump of dough that baked into something you could use as a doorstop. My beer bread never lets me down.

Yeah, the whole "kitchen's too cold" thing hits home. My last slow rise attempt was so dense I'm pretty sure I could have used the loaf to patch a hole in the wall. It had the structural integrity of a brick. Guess some of us are just meant for the quick and dirty baking life.
