Pro tip: That one Tuesday where my sourdough loaves all had perfect ears

Last Tuesday was a weird day, I don't know what happened but every single loaf I baked out of my 12 batch order came out with a perfect ear and open crumb. I didn't change my recipe or my 450 degree bake temp at the bakery on Main Street. Has anyone else had a day where the stars just align for no clear reason?

You think the baking gods just pick a random Tuesday to bless your starter or what? Honestly that's some kind of magic right there, I'd be half expecting a lightning bolt to hit my oven next time. Bet you checked your thermometer like 10 times trying to figure out what happened. Probably just the universe messing with us bakers, keeping us humble.
