My grandma watched me shape rolls and said I was doing it backwards
She came by my place in Toledo a couple weeks ago and caught me rolling dough on the counter. I was pressing it out flat and tight like I always do. She said "you're squeezing the life out of it, let it relax between your hands." Now I try it her way, cupping the dough and rolling with light pressure, and the rolls come out taller and softer. She's been baking since she was 12, so I guess the whole time I was just working too hard at it. Does anyone else shape differently depending on who taught them?
