So my roommate Kyle walked into the kitchen at 2am while I was making scrambled eggs after a shift and said 'you steam them too much, that's why they're rubbery.' He showed me his method with lower heat and pulling them off early. I've been doing it his way for 3 months now and honestly they're way better.
