Tried frozen fries straight from the bag vs. soaked and dried first, and the difference was honestly kind of shocking
I always just dumped frozen fries in the basket at 400 for like 18 minutes and called it good enough. Last Friday I got curious and did a side by side: same fries, same 400 degrees, but one batch I rinsed in cold water for 10 minutes and patted completely dry with a towel first. The soaked ones came out with actual crispy outsides and fluffy middles, while the straight from frozen batch had a few crunchy bits but mostly stayed limp and sad. I timed it too, the soaked batch needed about 3 extra minutes total but it was worth it. The weird part is I have been cooking fries wrong for like 2 years without knowing. Does anyone else bother with the soaking step or is that just too much work for a weeknight?
