My local florist cuts the stems under running water to prevent air bubbles. It seems to help the blooms last longer without forcing them open too fast. Maybe try lukewarm water instead of cold next time.

3 days is pretty standard for peonies to open indoors. Forcing them just makes the petals look tired.
