Update: I finally realized I was grinding my beans wrong after 6 years of doing it daily
I got a cheap hand grinder at a garage sale in Boise about 6 years ago and just cranked it however fast I could, thinking more speed meant it was working better. Last Tuesday my buddy watched me do it and asked why I was spinning it like I was trying to start a fire, then showed me his grind at a slow steady pace, and the difference in my cup the next morning was night and day. Same beans, same water, same pour, but the slow grind gave me way less bitterness and a cup that actually tasted like the blueberry notes on the bag. Turns out I was basically smashing the beans instead of cutting them, which made a ton of dust that over-extracted. Anyone else learn their grinder technique was the problem way later than they want to admit?
