My induction burner died mid-service last night, total chaos
Honestly, I was running a 40-cover tasting menu and the induction unit just shut off while I was searing scallops. Took me a minute to realize it was the burner, not the pan, and I had to fire up the gas backup and crank it fast. The scallops came out okay but I lost a full 10 minutes and had to replate two courses on the fly. Has anyone else had a portable induction unit just give up like that, or did I get a lemon?
