Hit 50 covers in one Friday night and realized I was doing it wrong
Last Friday we did 50 covers in one night at our 30 seat spot in Boise. Thing is, 12 of them were the same two tables flipping 6 times. My server said we were "busy" but the kitchen was just slammed on those two deuces all night. So now I'm stuck. Do I chase that number every Friday and keep flipping the same tables, or do I slow down and actually try to get regulars who order more? Part of me thinks the flip game is how we survive. Other part thinks we're just burning out the line for a number that looks good on the POS. Anyone else been here? What did you pick?
