Unpopular opinion: prefinished plywood beat my field-finished job by miles

I did a kitchen last month comparing a prefinished maple plywood from my supplier against the same sheet I sanded and sprayed with conversion varnish, and the prefinished stuff had way fewer surface defects and saved me about 4 hours of labor per cabinet. Has anyone else made the switch and found it's just not worth the extra work to finish in-house?
