Wheat paste from the grocery store beat my fancy pH neutral glue

I was skeptical about using plain old flour and water for book cloth. Everything online said use specialty adhesive, so I spent like $18 on a jar that dried way too fast and left bumps. Last month I ran out mid project and tried the wheat paste recipe from a 1970s book I found at a thrift store in Portland. Cooked it for 8 minutes on the stove, let it cool. It stuck linen to the boards perfectly, no warping, and it re-wets for easy corrections. Has anyone else ditched the expensive stuff for this? What's your go to mix ratio?

Same thing happened to me last winter... spent way too much on that fancy stuff and it fought me the whole time. The old school flour mix just works better, I do about 1 part flour to 3 parts water and it's been perfect every time since.
