Why does nobody talk about the time it takes to sort a new game?

Got the new 'Eclipse: Second Dawn' box, figured sorting the 400+ pieces would be an hour. It took three hours and two friends to get it all bagged and ready. Do you sort everything before the first play, or just dump it out and deal with the mess?
