Shoutout to BBQ crews that source their wood responsibly
I mean, it's wild how many pitmasters don't think about where their smoke comes from. Using wood from overharvested forests hurts the land, and maybe it's just me, but that doesn't sit right with good BBQ.

So people are out here worrying about wood ethics now? Next they'll ask if the smoke was from a sustainable cloud. Guess it's easier to find good wood than good brisket these days.

Yeah, the whole "wood ethics" thing sounds silly until you see a crew using wood from clear-cut areas (which happens more than you'd think). I just ask my guys where they get their oak or hickory. A good sign is if they name a local farm or a tree service that removes nuisance trees. Bad wood gives a thin, bitter smoke, so it actually does change the food.
