Why does nobody admit that baking a birthday cake from scratch can fully wreck your whole day?
Last Saturday I decided to bake my kid a 3 layer funfetti cake from scratch because I thought box mix was cheating. The first layer stuck to the pan, the second one came out raw in the middle, and I burned my hand on the oven rack at 375 degrees trying to save the third. By the time I frosted that mess it looked like a raccoon had pawed it, but my daughter said it was the best cake ever. I think we need to stop acting like boxed mix is some kind of crime. Does anybody else have a cake disaster story that turned out fine in the end?
Baking from scratch is just one of those things where we make life way harder on ourselves for no real reason. Same deal with making your own pasta sauce when a jar tastes fine, or spending 3 hours on a homemade Halloween costume that a kid wears for 20 minutes. The end result is almost never as good as the effort suggests, but the person doing it feels like they have to prove something. Your daughter calling it the best cake ever is the only review that matters, and she would have said that about a box mix too.
