Unpopular opinion: weighing my flour beat scooping it, and my banana bread finally stopped being a brick
I make banana bread maybe twice a week (my kids go through bananas like crazy) and for two years every loaf came out dense and rubbery. Last Saturday I finally tried weighing the flour on a $12 kitchen scale instead of scooping it with a measuring cup, and the difference was nuts. Same recipe, same oven, but the loaf rose a full inch higher and the middle was actually soft instead of gummy. Turns out scooping packs in way more flour than you think, like 20 to 30 percent extra, which is why my dough was always so stiff. I'm honestly mad I didn't try this sooner (my old loaf could've been used as a doorstop). So now I'm wondering, what else am I messing up by not weighing it?
