Why does everyone insist you need a stand mixer to make good bread?
I was at a bakery supply shop in Portland and overheard a guy tell his friend she couldn't make decent sourdough without a $300 mixer. I've been baking boules by hand for 6 months now, just flour, water, salt, and a bowl, and my crust and crumb are better than anything I got from my old KitchenAid. The dough doesn't even need heavy kneading if you let time do the work with stretch and folds every 30 minutes. So why do people act like a machine is required for real bread? Curious if anyone else here has gone back to hand mixing.
