I was training under her at a small shop in Boise back in March and she caught me scooping flour straight from the bin into my measuring cup. She tapped the scale and said 'weigh your flour, not your feelings' and then made me redo the whole sponge. Turns out my scooped cups were running about 20% heavy, which is why my sandwich loaves kept coming out dense and short. Been weighing everything for 4 months now and my crumb finally looks how I want it. Anyone else get a phrase stuck in their head from an old boss that just fixes your whole process?
